Good Morning! Good Morning! Good Morning!!! It’s Warrior Mom Monday and today I have two of the most special Moms I know to share with you. These women are Moms, business women and entrepreneurs, friends, cooks and adventurers. They have challenged me and have been my role models and heroes my entire life. Today I want to feature my two best friends... my sisters Sorrell Vickers Fields and Jamie Vickers Nelson. I love you guys!
Growing up as the middle child with all of us only one year apart had its many good days but I am sure my mom and dad could also recall its many bad / challenging days. When we were young, we were friends. But we competed in so many activities like 4-H, FFA, and rodeo there was always a competitive spirit in our house. But thankfully now that we have grown up and all become moms we have set aside those days and have grown into best friends I could only hope the same for all of our kids. I am so thankful to have the very best sisters and today I want to tell you a little about what they are doing. I could write a book full of my stories and adventures with them but today I will just highlight the most recent things they are doing and continue to write more in later blogs.
As most of you know I am a HUGE fan of food. I am passionate about cooking and tasting new and different foods. Well, my little sister Jamie shares the same passion but with more intensity. If you are ever hungry and want to sit down at a table full of food, good laughs, and conversation, her house is the place to go. Now this may be true for just about everyone in my family but I believe Jamie could be the next Rachel Ray but, of course, tons better!!! Jamie is not afraid of trying something new. In fact she seems to prefer that so she can stumble across a new family favorite. But today I would like to highlight her latest cooking adventure... stepping into Cuban food. Just typing this makes my mouth water and I wish I wasn't 5,000+ miles away to be stopping over to sample her food on a regular basis. I keep telling her she should start a cooking blog and I think together we can all encourage her to get it going so we can all enjoy the delicious meals she cooks each and everyday.
Here is Jamie’s Real Authentic Cuban Black Beans and Rice Recipe!!!
Cook your black beans with 2 yellow plantains and one Malaga cut them into cubes. I love using the pressure cooker bc it only takes 30 mins to cook dried beans. Once they are done you will cut up an onion and green pepper into really small pieces. And put them into a frying pan with a little oil. Two table spoons of minced garlic, table spoon complete seasoning, and about 3 table spoons of golden cooking wine. Last you will pour tomato sauce over top of it about 3/4 cup. Let that cook down for about 10 mins while its cooking down you will smash the plantains and Malaga into the black beans so they are not cubes anymore. Once that's done you will pour the tomato mix into the pot of black beans and cook on med for another 10-15 mins. You will want to eat the black beans over white or yellow rice. I love baking chicken to go with it as well. And plantains or Malaga fries.
Green Plantains you will want to cut the pieces at an angle and put into a pan of oil fry them till they are light brown and remove them from the oil and you will smash them flat and right before putting them back into oil you will dip them in salt water and fry them till they are a nice dark brown you can salt them to your liking. They are amazing :)
Malaga fries are also wonderful they kids love them. You will pill the Malaga till its nice and clean only white showing :) it's very slimy you can either mince it down with a grater or I also put it in the food processor because its a lot faster. You will then add eggs salt and minced garlic it all depends on how many Malagas you use if you use 3 then put 2 eggs and garlic and salt to taste. Then you will put it in a frying pan with very little oil and you will drop spoon fills and flatten then out and turn over when brown on bottom
Now my older sister Sorrell shares our same love for food and has great taste especially for good wine and cheese. But what she has recently done is something I have to brag on her about and share with you all. Sorrell has a heart to help women. She is phenomenal motivational speaker and has recently written a book just for women. We are both working very hard to wrap up the details and get this book published and made available for you to have as a Summer MUST Read. In the pages of this book we will dive in and Just Soak. We will learn to soak up the promises God laid out for us. His promises are designed to help us with the everyday struggles that we as women most often deal with…the WHATS in life! We will discover together that through Christ alone the WHATS will melt away and in turn will be replaced with solid truths from God’s Word; because Jesus answers every single WHAT!
We will begin to fill in the blanks of life and answer the ultimate questions as we discover that THE LORD IS MY_______!
I am the luckiest girl to have two amazing sisters and am also grateful for my amazing little brother Cameron Vickers. Because today's post is all about Moms and Women its not the time to introduce him to you but wait until you hear about how cool my little brother is...(of course he is... he’s a Vickers...:) ) If you have sisters I encourage you to become the very best friends you can with them, stick together, support each other and grow.
