GOOOOOOD Moorrrnnniiinnnnggg Friends! It’s May 26, 2013 and it’s a beautiful sun shining morning here in Czech Republic. Yesterday was a cold, windy, rainy day but a perfect indoor day for baking but you guys know me and how much I love being outside so I am thankful for today’s weather.
I thought I would blog today about May and talk about the importance of reflection. This month has been a really exciting month. First and most important Spring finally decided to come to Czech and after a very long hard winter it was welcomed with open arms.
I was thankful to start my month by celebrating my wonderful mother in laws birthday. She is one of the kindest and most helpful women I know and being able to have her in my life is a blessing. She lives her life each day with the goal of taking the best care of her kids and now grandkids and she’s just amazing!
She has taught me how to cook Romanian / Hungarian food and is the primary person I learned Romanian from. Micha is very lucky to have a grandma who loves him and spends so much time with him!
May has also been full of speaking events and the women I have been able to meet has been incredible. I normally end my events with a Q & A and at each event this month the questions the women asked were challenging and thought provoking and the support from the entire group helping to answer the questions was awe-inspiring as we worked to find solutions and offer our own life experiences as examples and lessons learned. One question that has continued to reoccur and I promise to address it more in blogs and maybe some videos and webinars as a class is “Finding Your Life Purpose…” It seems the women fall into two categories on this topic… they are either mid 20’s early 30’s fresh out of college and in a career they don’t want to be in and looking ahead with fear that this current place in their life could be long term… so they are seeking self discovery and life change to be more fulfilled and happy. Then there is the second category of women who are either retired or at the end of a long career, kids are grown and they are looking on their life with deep reflection and asking the question “what is my purpose?” “What really makes ME happy?” These ladies have spent their lives raising kids, taking care of their families but now with the option of doing something for themselves they are questioning… “What should I do with my life?” These are all great questions and both groups of women are seeking to live a more fulfilled life rather than just blend in and go with the flow… So stay tuned as we will get into some lessons this summer to help us all answer these questions and live richer lives. I have been taking time myself to also do some things I really love and of course make some experimentation's. Since moving to Europe I have had allergies and with everything in bloom right now I decided I needed to try something to help me combat my itchy eyes and runny nose. Now this solution may scare most of you as it has for just about everyone I've shared it with but you guys know me and my love for trying something new and also staying as natural as possible…. So how many of you guys have ever been stung by nettle or have an infestation of it growing around your house?
Thankfully Romania is really into alternative health remedies and my mother in law was explaining to me all the great health benefits from this nasty stinging plant.. so I decided to Google it before digging it up or burning all of the plants that keep stinging Micha and I … and I was amazed to see all of the health benefits from this plant… Stinging Nettle can be made into tea or cooked and even infused!
So I thought what the heck… I am tired of sneezing and I am determined to find natural ways to help myself and not take medicine… and I am happy to report I now have. I have made some tea and also a dip with the Nettle leaves (follow recipes just like spinach just replace with nettle)… and it actually taste good!!! Here are the links I found and then have just been experimenting with recipes I can find that call for Spinach… and I just replace with Nettle leaves!
Stinging Nettle Soup
I actually just returned this past week from a speaking tour in Romania that went fantastic and while there I was able to go hiking in the beautiful mountains right out my back door which I love love love to do!
It’s so peaceful to be up in the mountains.. to hear the birds singing, the wind blowing through the tress and to see the untouched beauty of nature just smiling at you! I felt refreshed and inspired after my hikes!

Since returning home I have been taking a some breaks from my work to relax and do some things I really love but have been putting off… I planted my first garden since living here in Czech.. it’s small but perfect for me to be able to take care of and work in it with pleasure.
There is such a feeling of accomplishment from planting a garden and for me it’s so relaxing to be able to take a little time each afternoon to work in it! I'll keep you posted about my veggie's:)
As many of you know my Micha is a milk lover and drinks LOTS everyday. And we are fortunate enough to be able to by fresh cows milk. Well I've been buying in plus and had a bit to much so yesterday I decided I needed to do something with all of this milk so it didn't go to waste… I am so happy to share this recipe with you… I made the very best fresh cheese yesterday and guess what…. It was so easy! You just need fresh cows milk and lemon… that’s it and it only takes around 45 minutes from start to finish! You've got to try this recipe and if you love cheese like I do I doubt you will buy again from the store!

I also had a large bowl of the milk fat/cream that I take off the milk each day after boiling it. I've written a previous food blog on how to make butter.
So yesterday afternoon Micha and I decided to add some fresh garlic and sea salt into the cream before making it and let me just tell you…. It turned out sooooo yummy! One of Micha’s favorite foods is toast with garlic and butter and last night him and I ate ourselves full of toast with our delicious butter, a fresh salad and hot tea!
A perfect end to a great day!
This month has been full of activities and I am sure I am leaving out so many things so I’ll have to add those later but an important growth activity for me that I have mentioned before but wanted to share again is taking time to journal and reflect. It can be brief and just highlighting things on a daily, weekly, monthly and quarterly basis or more in depth like taking your feelings and progress towards your goals into reflection. Reflection helps us grow, look at our lives and take an honest look at where we are and how far we've come. When we reflect we can decide what we liked or didn't like and then decide to change and do something about it. Today’s Sunday and my longest reflection for the week happens today and because it’s the end of the month I am also thinking about everything that’s happened this month and looking ahead to what I want to do differently and change for June! I normally reflect on the previous week in-depth and as I plan the week ahead I am aware of what I need to do to improve and change to be my best… to reach my goals! Trust me taking time to do this will improve the results you are after and also the overall quality of your life because you will begin to become more aware of yourself.
I am planning now for an awesome week ahead and enjoying a delicious cup of my favorite coffee (Lavazza Crème) and some super yummy cookies (here’s the recipe) I forgot to mention Micha and I also baked these cookies yesterday during our indoor rainy productive day:) and then I am going to do my morning yoga with Tara Stiles… I recommend you watching her videos… she’s awesome and does a great job teaching! It is one of my goals to practice yoga on a daily basis and get stronger and more flexible:)
